This is a 300 year old recipe dating back to colonial New England - when taverns were important spots to gather and conduct business. When I first tasted this drink I was surprised at how balanced and tasty it was! The term, rattle skull, refers to someone who talks a lot (so much to rattle their skull), but it's an ominous looking drink with a name I thought appropriate for the spooky season. How to Make the Rattle Skull

  • Porter-forward.

  • Lightness from the lime.

  • Higher ABV but subtle spirits.

  • Use a large glass, something that can hold 16oz.

  • You know the drill, chill that glass!

The Rattle SKull Recipe

  1. Start with a shaking tin.

  2. Pour in 1 oz. of your favorite rum.

  3. Next, add 1 oz. of Cognac.

  4. Then, 0.5 oz of rich demerara syrup.

  5. Last but not least 0.75 oz of lime juice.

  6. Add Ice and shake for about 5-8 seconds.

  7. Pour a full 12 oz. of porter into your chilled glass.

  8. Pour the cocktail mixture over top of your porter quickly.

  9. Top off with grated nutmeg.

  • 1 oz. (30 ml) Appleton Estate Signature Jamaican Rum

  • 1 oz. (30 ml) Maison Rouge V.S.O.P. Cognac

  • 12 oz. (360 ml) Founder's Porter

  • 3/4 oz. (22.5 ml) fresh lime juice

  • 1/2 oz. (15 ml) rich Demerara syrup (2:1 sugar:water)

  • Grated nutmeg
