This is a wonderful drink to know, we build this one right in the glass and swizzle with crushed ice. Quick, easy, and super refreshing! It's like an elevated mojito, and was the house cocktail of the Queen's Park Hotel in Port of Spain, Trinidad over a hundred years ago. So although this rum drink predates the tiki era, the inclusion of crushed ice with its tropical origins make it an easy fit among other classic tiki drinks. I always enjoy a mojito, and I love my aromatic bitters, so this one checks all the right boxes for me and I know you'll love it too!

How to Make The Queen’s Park Swizzle

  • As refreshing as a cocktail can possibly be!

  • Richness from the rum.

  • Cooling mint and spicy bitters.

Sips

  • Ideally use a demerara rum to achieve those rich flavors but any rum that you enjoy can work.

  • A swizzle stick is nice to have here but a bar spoon works just as good to mix.

  • Make sure you have ice ready for crushing!

Tips

  1. Today, we are building our cocktail right in the glass so grab a highball and lets get started.

  2. Place 8-10 mint leaves in your glass and stir them around with your bar spoon, lightly pressing the leaves along the inside of the glass to release some of the oils. Try not to muddle here, we don’t want to create pulp.

  3. Next, add 2oz. of rum.

  4. Then, 1/2oz. of rich demerara syrup.

  5. And 3/4 oz. of fresh lime juice.

  6. Place your swizzle stick in the glass.

  7. Add finely crushed ice to your glass and fill most of the way up.

  8. Swizzle using the swizzle stick and lift the liquids. You want to see a bit of foam begin to appear.

  9. Top off your glass with more crushed ice for a snow cone effect.

  10. Add 4-6 dashes of angostora bitters to the ice on top and you’ll see the nice layers formed.

  11. Now finish off by adding a sprig of mint along with a straw.

The Queen’s Park Swizzle Recipe

  • 2 oz. (60 ml) El Dorado 12yr Demerara Rum

  • 3/4 oz. (22.5 ml) fresh lime juice

  • 1/2 oz. (15 ml) rich Demerara syrup (2:1 sugar:water)

  • 8-10 mint leaves

  • 4-6 dashes Angostura Bitters (big bottle = big dashes, adjust accordingly for smaller bottles)

  • Mint for garnish
