
Today we’re making a Hemingway inspired cocktail, Death in the Afternoon (the drink not the book)! The original specs on this cocktail are a heavy pour of a strong spirit (absinthe) topped off with more alcohol (champagne). I'll be making my favorite version of this drink that's slightly toned-down. I think it'll be a bit more approachable to a wider audience. Don't be fooled, however - this drink's still rather strong. If you plan on sipping these through the afternoon, be sure to clear your schedule!
My version of the “Death in the afternoon” Cocktail
Easier to drink than the original.
Great if you like Absinthe but don’t want it to be the only flavor.
Sips
Use fresh lemon juice if possible!
Chill a coup (or two) in advance.
Tips
A toned down “Death in the afternoon” Recipe
Start with a mixing glass.
Pour in 1 oz. of Absinthe.
Next, add 1/4 oz. of simple syrup.
Then, 1/4 oz. of fresh lemon juice.
Add a few cubs of ice and stir to chill + dilute.
Single strain into the chilled glass.
Top with 3 oz. of champagne.

1 oz. (30 ml) Nouvelle Orleans Absinthe Superieure
3 oz. (90 ml) Laurent-Pierre La Cuvee Brut Champagne
1/4 oz. (7.5 ml) fresh lemon juice
1/4 oz. (7.5 ml) semi-rich simple syrup (1.5:1 sugar:water)
