HOW TO MAKE The Penicillin Cocktail
The penicillin may not be a cocktail that has withstood the test of time just yet (since it was created in 2005) but I believe this one is here to stay.

Hints of Honey & Peat
Iām using Monkey Shoulder & Laphroaig 10 Year but, as always, you can substitute your favorite spirit in each category.
I mix in the peaty Islay whisky before shaking, but a lot of recipes will have you float it on top of the drink at the end. You're in charge here. Try it both ways and see what you like best.

Tips
The penicillin Cocktail Recipe
First, grab a cutting board and a knife & cut 3-4 coins of the ginger. (no need to peel but I advise rinsing off dirt)
Muddle the ginger in a shaking tin until mushy.
Pour in the following:
2 oz. Blended Malt Scotch Whisky
1/4 oz. Islay Single Malt Scotch Whisky
3/4 oz. fresh lemon juice
3/4 oz. honey syrup (3:1)
Add ice & shake until it further breaks up the ginger.
In your lowball glass, add a large ice cube.
Double strain into your glass.
(Optional) Garnish with candied ginger or a twist of lemon.

2 oz. (60 ml) Monkey Shoulder Blended Malt Scotch Whisky
1/4 oz. (7.5 ml) Laphroaig 10yr Islay Single Malt Scotch Whisky
3/4 oz. (22.5 ml) fresh lemon juice
3/4 oz. (22.5 ml) honey syrup (3:1)
3-4 slices of fresh ginger
Candied ginger for garnish (Or lemon Twist)
