I'll be making it two ways - the classic "light" version, and a fuller-flavored "dark" rendition. And because balance in a daiquiri is crucial, I'll show you how I adjust the ratios ever so slightly to reach that perfect marriage of sweet and tart. How to Make a Daiquiri

  • The perfect balance of sweet & tart.

  • Creamy, almost vanilla, notes from the rum shine through.

  • Freeze your glassware, it’s important that it is ice cold.

  • This recipe can be altered to create a “Dark” version of the Daiquiri by replacing the light rum with dark rum and the simple syrup with rich demerara syrup. Follow the same steps in the recipe either way but refer to the ingredient list at the bottom of this page for the relevant ratios.

Tips

  1. Begin with a shaking tin.

  2. Pour in 2oz. of either light or dark Jamaican rum.

  3. Add 1/2oz. of simple or demarara syrup.

  4. Next, add 3/4 oz. of fresh lime juice for the classic or 1oz. for the “dark”.

  5. Add ice and shake for 15 seconds to chill and dilute.

  6. Double strain into your chilled glass.

  7. Garnish with a lime wheel.

  • 2 oz. (60 ml) Real McCoy 3 year Rum

  • 3/4 oz. (22.5 ml) fresh lime juice

  • 1/2 oz. (15 ml) semi-rich simple syrup (1.5:1 sugar:water)
